Donabe is a style of traditional Japanese earthen cookware – the Kanji characters do and nabe mean clay and pot, respectively – that is universal in Japan. Donabe cooking has been refined over centuries into a simple and versatile method for preparing both dramatic and comforting one-pot meals. In this beautifully photographed cookbook, Tokyo native and Japanese cooking expert Naoko Takei Moore and Chef Kyle Connaughton offer inspiring Japanese home-style recipes – all rich in flavor, easy to prepare and perfect for communal dining. It also includes recipes from other leading chefs who use donabe in their own kitchens.

We first met Chef Kyle Connaughton at his three-star Michelin restaurant, Single Thread in Healdsburg, CA. Chef's Tan Tan Nape recipe can be re-created with his recipe in Donabe: Classic and Modern Japanese Clay Pot Cooking and our Donabe clay pots.
